Fortunately, I love Mondays. I get to sleep in, go to the gym early, and hang around until my first class begins at 1:15. Sounds like a perfect college day to me! Plus, a good Monday carries through the rest of the week, which is why I'm generally in a great mood.
My last post was about chia seed pudding. Needless to say, I'm hooked on they goopy goodness. I've been making it all week because it's so easy, nutritious and filling. Today, I stepped up the chia pudding game. Here's the recipe:
Chia Breakfast Smoothie:
1/8 cup + 1 tbsp chia seeds
1/2 cup + tbsp unsweetened coconut milk, or almond milk
-Refrigerate for at least 2 hours
3 tbsp rolled oats
1 tbsp cocoa powder, unsweetened,
1 tbsp peanut butter
1 tsp instant espresso
Naturally, I topped with chocolate chips, coconut chips, walnut and a bit of banana for some extra texture.
