I consider myself a morning person. Yup, fully functioning at 7:30 AM is an everyday occurrence for me. Being IN work at 7:30 is a totally different story..

What's next you might ask? Obviously breakfast! But can I make in 10 minutes...think Ashley think...breakfast sandwich. Ahhh yes, the breakfast sandwich. Perfect for eating on the go. Filling and satisfying. As my egg cooked, I whipped up a coconut flour english muffin and sautéed spinach alongside my egg.
Coconut Flour English Muffin:
1 tbsp coconut flour
1 tbsp water
1 tsp olive oil
pinch of salt
1/2 tsp baking soda
Microwave for 1 minute in a bowl, cut in half, and eat right away or toast! Same recipe as the coconut flour bread from last night. This recipe is so versatile! It can be used in so many ways in order to get the satisfaction of eating bread, but without the carbs and added chemicals.
10 minutes. Think of all the things you can do in 10 minutes: drive to the mall, run a mile, make breakfast. There is always time!
I am reminded why breakfast is so delicious every single morning. I could eat breakfast for every meal and never get sick of it (sad, but true). Who doesn't love eggs, omelettes and pancakes!? In order to have a great day, it needs to start off on a good note. A full and satisfied belly will do the trick.
