Today was one of those days where I wanted pancakes all day. Not just regular pancakes though. Coconut flour pancakes. If you haven't noticed, I love coconut flour. What's not to love? Plus, it is much tastier than icky all-purpose flour.
Anyways, let's get to the good part. These pancakes are 4 ingredients for the base. 4 INGREDIENTS!
Coconut Flour Pancakes:
2 tbsp coconut flour
4 tbsp egg whites (I use TJ's liquid egg whites)
2 tbsp water
1/2 tsp baking soda
dash of vanilla
cinnamon to taste
*I added 1/4 cup of frozen thawed blueberries for something a little different*
I also want to mention that a big spatula is necessary to flip these lil guys. Until they are cooked, they are quite delicate because of how light and moist the batter is!
The end result:
Pancakes. Syrup. Bacon. Except these pancakes have 2 grams of fat, 8 grams of carbs, and 8 grams of protein. There is no sugar in them, except for the syrup on top. Regular pancakes don't even compare to the fluffy and filling coconut flour alternatives. Not going to lie, I make these multiple times a week because they are that good. Look at them..one more time...
