So yeah...it's been a while. I've been so incredibly busy this semester. I can't even begin on how crazy and jam packed my schedule is, but I love it! I'm ashamed to say it, but I've been living off cliff bars and random lunches/dinners this week. Not so proud. Mostly because I didn't food shop for almost 2 weeks so I was just trying to survive off chicken tenders and soup. Well, here I am again eating soup. This time it's not Amy's veggie lentil. It's Ashley's lentil. Hahahaha. I'm slightly losing my mind/my brain is fried from this week.
Chicken and Lentil Soup:
1 clove of garlic
1 can pre-cooked lentils
Pre-cooked chopped chicken
1 container of veggie broth or chicken broth
Sautée onions and garlic in 2 tbsp of butter until lightly cooked. Add in broth and bring to boil. Add chicken and lentils and simmer for 10 minutes.
Thankfully I have Saturday off so I hope to do some cooking and meal prep! Hope everyone is enjoying the semester :)
