By now, you most likely know that breakfast is my favorite meal ever. Lately, I've been super lazy on my breakfast game. I found a solution though...overnight chia oats. I know one of my last posts was about chia pudding so don't be confused. This is even better. Ok so you literally just add rolled outs to your chia seed pudding and now your breakfast game is 10 times better. Plus, look how pretty and scrumptious these bowls look!
Overnight Chia Oats
1/4 cup rolled oats
2 tbsp chia seeds
2/3 cup coconut milk
1 tbsp agave or honey
**Mix and chill overnight. Warm in the microwave for 2 minutes in the morning for a soul-warming breakfast and top with fruit, nuts and more agave :)
On a side note: I fortunately got sick before the busiest 2 weeks of the semester! Going to school for education has totally taken a toll on me mentally and physically. Yes, teaching seems like an easy job, but there's so much more to the profession than what meets the eye. Lesson planning, meetings, questions upon questions..it literally never ends! I'm in the midst of preparing for a unit on World War 2 so I'm incredibly excited, but worried about how I am supposed to fit everything about World War 2 into a 2-week unit! Challenge accepted. If I go M.I.A. for a couple of weeks, this is my warning to all of you! On the bright side, I will be done on April 15th, graduating May 14th and the rest is unwritten.......
