Chia seed pudding sounds quite unappealing. Let's face it: pudding has such a negative connotation these days--jiggly, gross, etc. Chia is a game changer though. These tiny seeds are a nutritional superfood packed with fiber and omega 3s. Sounds healthy to me. For months and months I've been swooning over pictures of chia pudding (it draws such an aesthetic). So last night, I whipped some up, popped it in the fridge overnight and topped it this morning with fruit and nut butter. It's so simple too!
Chia Seed Pudding:
1/4 cup chia seed
1 cup coconut or almond milk
2 tbsp agave or honey
(The recipe was on the TJ's bag hehe)
I admit, the texture might be weird for some, but I find it smooth and filling. The little seeds remain a bit crunchy, but it adds a nice texture, especially paired with coconut chips. So, while I relax all break, I might be spending less time on breakfast due to how simple this meal is!
