With cold weather comes my soup obsession. I love soup. Absolutely love it. Unfortunately, my taste in soup is expensive. You could say that I'm addicted to Amy's Lentil Vegetable soup, but at almost $3 a can, I'm better off making my own soup
Chicken, Lentil, and Black Bean Soup
1 medium sweet onion
1 clove garlic
2 tbsp olive oil
Salt, pepper, chili powder, and paprika (to taste)
1 cup uncooked lentils
1 can black beans
3 cups vegetable broth
*Chicken is optional. I added one baked chicken breast that I seasoned with salt, pepper and garlic powder. Cooked at 375 for 40 minutes.
Cook one cup of lentils with 2 cups of water. Bring to boil and simmer for 30 minutes or until water is absorbed. Put to the side.
In a stock pot, turn heat on medium. Add olive oil and wait until hot. Add onions, garlic and carrots. Sweat out the vegetables for 5 minutes. Add seasoning, stir and cook for 3-5 more minutes. Next, add 2 cups of vegetable broth. Bring to boil then simmer. When broth is simmering, add lentils, 1 can of drained black beans, and pulled chicken. Simmer for 15-20 minutes.
So simple and yummy! I love the slight taste of chili powder and the richness of the beans and the lentils together. Perfect for a cool fall day.
