My life has been CRAZY! Working 3-4 days a week, student teaching 5 days a week plus classes. Yes, I have no days off. Literally none. I've been taking care of myself, but it hasn't been enough to ward off any sicknesses. So here I am, sitting at home with my nose practically dripping all over myself, insanely congested and tired. Cold season has officially caught up to me. I woke up this morning and knew that I needed some insane replenishment, starting with Vitamin C. I made a yummy smoothie with strawberries, clementines, coconut water and ice cubes and drank that for breakfast. I've been chugging water all day as well. Lastly, I made a delicious homemade chicken noodle soup! It came out great., especially the main star: roasted chicken.
For the chicken: preheat oven to 400 degrees. Rinse and pat chicken dry. Cover with salt, pepper, seasoned salt, onion powder, garlic powder, paprika, herbs de provence and thyme. Cook for 35 minutes, until juices run clear. I honestly haven't been eating much meat lately, but I felt that chicken was necessary in a hearty, soul-warming soup.
Chicken Noodle Soup
2 cooked chicken breasts, shredded
Egg noodles (I used 2/3 bag, cooked for 5 minutes, rinsed with cold water and set aside)
5 cloves garlic, chopped
1 sweet onion
1 container chicken broth, lightly salted. I use Hannaford Organic
1 tbsp tomato paste
Pan drippings from chicken
salt, pepper, herbs de provence
This recipe list is super short and simple. No need to add a bunch of unnecessary vegetables (I'm talking about carrots and celery...they don't do anything for my honestly. I just pick out the cooked carrots yuck!)
-Add 2 tbsp olive oil to hot pan, cook garlic for a minute and then add onions. Cook onions until translucent. Season with salt, pepper, herbs and add tomato paste. Cook for 1 more minute.
-Add pan drippings from chicken, stir and add container of chicken broth. Bring to a boil
-Once broth reaches a boil, add shredded chicken and egg noodles. Simmer on low for about 30 minutes.
Serve warm and enjoy :) Hopefully this soup will help heal my scratchy throat and hungry tummy!
