Today felt like summer: the humidity, the oppressive heat in and outside of my apartment. I couldn't be any more excited though. We can all admit that this winter was horrible. Winters have a terrible effect on me. I feel lazy, unmotivated, and hungry..all of the time. Plus, I hate being cold. Warm Ashley=happy Ashley.
After my run, I was having some hardcore cookie cravings (no surprise there). All I wanted was a warm and gooey chocolate chip cookie. Preferably ones with peanut butter in them. So I made some. I also made my apartment 5 degrees warmer, but whatever. Warning: these aren't average cookies.
Preheat oven to 350 degrees.
Peanut Butter Chocolate Chip Cookies
Makes 15-18 cookies. I lost count because I ate a few.....
1 cup of natural peanut butter (almond butter works too)
1/4 cup of honey or maple syrup (you can add more or less depending on your sweet tooth)
1/2 tsp baking soda
1/2 tsp vanilla extract
2 tbsp dark chocolate chips
Mix ingredients well! This batter will be sticky, but don't worry!
Next, roll batter into little balls and press down with hand onto a well greased cookie sheet. Pop into oven for 10 minutes!
Put them onto a cooling rack to cool down. Easiest cookies I've ever made.
I was too lazy to take pictures with my camera tonight so deal with my beautiful iPhone pictures. As I was baking, a thunderstorm hit and I nearly forgot about these in the oven while I ran around looking for candles and my flashlight. I thought the power was going to go out..whoops. Luckily, the cookies survived and so did I! Now, all I can smell are cookies and the scent of 4 different candles. Ahhhhh, sweet.
