I was feeling a bit risky this week when I went food shopping. I got chicken drumsticks. 6 for $3..I couldn't pass up that deal. Plus chicken is pretty versatile. What could go wrong?
Well actually nothing went wrong and my lil drummies turned out pretty darn good. I threw in a bunch of random seasonings in a bowl (actually, not so random), preheated my oven to 400, and baked them for 40 minutes.
Hello yummy chicken! For the seasonings I eyeballed
-fresh ground pepper
-crushed red pepper flakes
-Italian herb blend
I rubbed the seasonings over the chicken and under the skin (because I take the skin off..I'm weird I know)
To stretch the chicken over the week for meals, I cut and roasted 2 large zucchinis. I put the zucchini in the oven with olive oil, salt and pepper and cooked for about 20 minutes with the chicken.
This is what I ate for dinner at work for the week. For snacks and lunch I defrosted pre-made burgers and cut up broccoli and bell peppers to have with hummus. So easy!
Next, I made a treat for the week as well. Fudge.
Chocolate Walnut Fudge
1/4 cup coconut oil, melted & cooled
1/4 cup cocoa powder, unsweetened
Heaping tbsp honey/maple syrup (or more depending on your sweet tooth)
pinch of salt
1/2 tsp vanilla
1 tbsp walnuts, chopped
Mix together and spoon into a baking pan, silicone muffin cups, or paper tins. Refrigerate until the fudge is set. Store in refrigerator as well! Such an easy treat.
