Vacation has been such a struggle. Just kidding. I've fallen asleep past 12 every night and slept in until 8:30 nearly every morning. I think it's taking a toll on my body. For the rest of break, I will attempt to wake up earlier and earlier every morning because 5:30 AM will come fast once the semester starts again. I'm slightly nervous for my student teaching next semester. I'll be at a high school ahhh! Crazy to think that I graduated 3 years ago now I'm going to be teaching those little nuggets. Next week will be about adjusting and presenting myself professionally, but also so the kids like me. That's important too lol... Anyways!!
I had a fabulous workout this morning, and by fabulous I mean that my legs are already really sore. Yup. I ran 1 mile and did legs for a half hour. I was a little ambitious might I add. I FINALLY added 20 pounds back onto the barbell, go me! I really want to lift more because it's a good way to challenge myself. I back squatted 60 lbs for 10 reps of 5--in between I did 5 alternating lunges. So today I did 50 lunges and 50 lighter squats. I decided that what the heck, if I can do this for 50 reps than why not add some weight. So I did. 70 lbs * 10, 80 lbs *10. Ugh. On the bright side, I did it. An older woman even approached me to tell me that she "loves watching me" do lunges because I'm so flexible and keep my back straight. AYyyyyyy go me. Naturally, I come back to my kitchen willing to eat anything in my sight.
big scoop of mild salsa
even bigger scoop of black beans
hard boiled eggs (boiled for 15 minutes, sat in hot water for a few more minutes)
sweet taters (cut, boil for about 10 minutes until tender, sauté in olive oil and season)
-Side note: boiling sweet potatoes is MAGIC! They take forever in the oven so when you're starving and can't wait 40 minutes for a perfectly cooked sweet potato, boil them.
Well, I hope everyone has an amazing and fun filled week!
