Happy Labor Day! "What is labor day for?" you might ask? Well, it's a national holiday dedicated to workers, essentially everyone in the US. Thankfully, many of us don't have to work today, but for those of you who are working, that kinda stinks.. Nothing like working on a legal holiday! Keep plugging away people. For students, this also means that there are no classes. YAY! On the bright side, it's going to be 90 degrees out today so I'm going to the beach. Unfortunately, I'm going to fry in the sun because I haven't laid out in weeks. Nothing like a sun burn to welcome in the new school year.
Fo realz...Has anyone else been loving this weather lately? Talk about perfection! It's been a mix of sunshine and warmth, but cool at night. Is there a state that has this weather year round? If so, I'm moving after graduation. Nana and papa would probably kill me if I moved out of New England but a girl needs the warmth. Since it was so cool last night, I decided to make brownies. I haven't baked anything in a while because it's been so warm. Here's the long awaited brownie recipe!
Gluten Free Brownies
1 cup peanut butter or almond butter (I used chunky PB)
2 tbsp coconut oil or butter
1/3 cup honey, maple syrup or agave
1 tsp vanilla extract
1/3 cup cocoa powder, unsweetened
1/2 tsp baking soda
1/3 cup dark chocolate chips
Whisk egg, mix in wet ingredients. Stir until smooth. Mix in dry ingredients and add chocolate chips last.
*Preheat oven to 325. Pour into a small, greased baking dish and bake for 18 minutes.
These tasted delicious when they were still warm because the chocolate chips were gooey :).
