This week has been the epitome of summer. Constant sunshine all day, warm nights and a few thunderstorms here and there. Happy bakers don't like hot kitchens though, especially if it heats up your entire apartment (we don't have AC). Thankfully, there are ways to make sweets without the oven :)
No Bake Brownie Bites:
2/3 cup quick oats
1/4 cup oat flour (ground up quick oats)
2 tbsp unsweetened cocoa powder
pinch of salt
1/4 cup coconut sugar or regular sugar
1/4 cup chocolate chips
1/4 cup chopped walnuts
1/4 cup coconut oil or oil of choice
1/4 cup water
(Chocolate Covered Katie's blog has a very similar recipe, I added + omitted some ingredients though!)
Mix ingredients together. Refrigerate until firm. Roll into balls and store in the fridge until you're ready to eat them! Made 14 bite sized balls..some didn't make it into the picture though.
Raw Triple C Bites (Cocoa, Cashew and Coconut)
1 1/2 cup pitted dates, soaked in warm water until soft
1/4 cup cashews
1/4 cup shredded unsweetened coconut
pinch of sea salt
1 tsp vanilla extract
*Use a food processor to combine the ingredients until the dates and cashews are ground finely together. Use a muffin tin and fill each section with enough of the date mixture to cover the bottom. Refrigerate until set. I had some extra mixture so I kept it in an air tight container in the fridge to use/eat at my leisure.
2 heaping tbsp cocoa powder
1 tbsp almond butter
1/4 cup coconut oil, room temperature or liquid (I used a bit less because the almond butter has natural oil in it)
1 tbsp honey
pinch of sea salt
1/2 tsp vanilla extract
*Mix well in a small bowl, pour over each section of the date mixture. Sprinkle with shredded coconut and refrigerate until the chocolate has set.
Both of these treats satisfy a chocolate craving without the chemicals and refined sugars. I highly recommend using dates in baking in order to add a natural sweetness to desserts. They are even delicious to snack on! I'm not telling you to eat these desserts in one sitting because they're all-natural, but you feel better eating these instead of processed cookies and cakes. It's so much easier to make sweets at home instead of buying them in the store. You can foster a lot of creativity in doing so. Have a great night everyone!
