Most of you are probably scared by that title. Pasta is so addicting and delicious and so versatile. I know..but just wait.
Thursdays are the longest day of the week for me. 3 classes between 8:30-6:40. Thankfully I have about an hour and a half between each class, but it still makes for a long day. Despite my schedule being jam packed, I love this semester. My student teaching is going well and I'm lucky to be in classes with amazing, hilarious 7th graders. It's a relief to know that I'm entering a profession where the good days outweigh the bad. Buuuut today, was sort of a bad day. I'm tired and my attention span is nonexistent by the end of the day. Plus, I reallllllly wanted Mac n cheese.
I took out all the ingredients to make Mac n cheese: butter, milk, cheese, seasoning, and the pasta. This was serious business. I didn't even look at my Annie's box because I wanted it homemade. I took out the pasta and ate a couple raw pieces (weird, I know). Suddenly, I realized that I didn't even want pasta. I didn't want to feel bad about myself if I ate it. I didn't want that feeling to linger over me all night, especially if I'm making popcorn later. Instead, I took out some broccoli and steamed it, as well as some frozen peas. I made a cheese sauce with
1 tbsp butter
1 tbsp flour
1/2 cup 1% milk (didn't measure, approximately)
1/4 cup cheese (or a giant handful)
Seasonings: salt, pepper, onion powder
I melted the butter over medium heat and stirred in flour. Let it cook for 1 minute. Then I added the milk and cooked for 3-4 more minutes. Seasoned. Finally, I turned off the heat and added the cheese, slowly mixing it.
Holy crap. So delicious, light and cheesy. Just what I needed.
I also baked a couple chicken tenders and paired with my cheesy veggies. Who needs pasta anyways? Veggies for the win. Simple, healthy substitutions can make you feel so much better about yourself.
