I know why you came here. You came here for the chocolatey goodness that you saw on my Instagram. Don't lie. I don't blame you for being intrigued by such a visually appealing and chocolatey ball rolled in coconut because this is what led me to making these bad boys.
Even though I have boat loads to talk about, I'll cut to the chase.
Raw Chocolate Truffles
4 cups pitted, soaked dates (soak dates in hot water for 10 minutes, drain)
4 tbsp cocoa powder
1 tsp vanilla
*Combine above ingredients in food processor. Pulse and scrape down edges until batter is smooth. Spoon 1 heaping tbsp of mixture onto baking sheet and repeat, made about 20 truffles for me! Freeze for a few hours, remove and roll into balls (they're much easier and less sticky to roll once cold), then roll in cocoa powder or coconut flakes.
Ahhh look at that perfect symmetry. I'm a genius sometimes, just kidding. On another note, I told myself that I'd be giving up sugar and diary, but look how far that got me. I really need to start focusing on what I'm eating, considering that I'm running a half marathon in July and I need to be at 13 miles by May 15. Can I train my butt off for a month and a half? AHH! I ran 7.3 miles on Sunday out of the blue and ran 3.5 miles yesterday with no problem. It feels exhilarating and stress releasing to run and not feel tired.
