Yay another soup post! You're probably wondering if soup is the only thing I eat. Honestly, lately, yes.
So here's another recipe! I don't know what to title this one, but it's pretty delicious.
1 small onion
1 can black beans
1 can kidney beans
1 sweet potato
1 chicken breast
1/2 container of vegetable broth
1/4 tsp cayenne pepper powder (or less depending on spice preference)
1/4 tsp chili powder
Sautee onions in 2 tbsp of olive oil over medium heat until soft. Add salt, pepper, and spices. Add sweet potatoes and coat with olive oil and spices. Add black beans and kidney beans (including the water they are canned in!) and stir. Add vegetable broth and simmer for 30 minutes on low, stirring occasionally. Add chicken last and stir!
I love soup for lunches, especially on cold fall days. This one is hearty enough to fill my stomach until dinner time, plus it's a little spicy.
