Holy plant goodness!
I was impressed with my running tonight at the gym. 2 miles, 1 mile, 1/2 mile with quarter mile walks in between. I also did and after! I feel so fueled and energized from making simple changes in what I eat. Nothing like a good sweat fest.
The star of dinner tonight were these lentil and sweet potato patties. What you need:
1/4 cup lentils cooked
1 small sweet potato cooked
1 egg beaten
1 1/2 tbsp coconut flour
Garlic powder, onion powder, salt and pepper
Smash cooked lentils and sweet potatoes until a paste is formed. Add egg and seasonings until incorporated. Form into little patties and bake at 375 for 22-25 minutes until golden brown. Serve in a pita, over a salad, or alone with dipping sauce. Seriously so yummy and filling, especially after a post workout meal. I topped these with cholula mayo :)
