These 40 hour work weeks are terrible, but manageable. Life is going to be so fun when I have a real job. I'm too lazy to cook anything special by the time I'm done with my work day, especially if I go wake up early to hit the gym before work (which is always the case). Luckily, zucchini noodles fell into my life. Raw or cooked, zucchini noodles are light and delicious. All you need is a julienne peeler, or if you're fancy shmancy, a spiralizer. Wash the zucchini, cut the ends off, lay down on a cutting board and peeeeeeeel until you reach the core. Don't throw the core out though. You can shred it to make zucchini bread or cut it up to roast/sautee for later. Reuse the zucchini people! I made PaleOMG's zucchini bread and it was a delicious treat. You couldn't even taste or see the zucchini. Craziness.

My favorite way to prepare these noodles is to melt butter in a pan. Once the pan is hot, add a small clove of garlic and let it cook (the browner the better in my opinion). Add the zucchini noodles and an extra slice of butter. Toss around and serve with cheese and crushed red pepper. Just like eating pasta, but minus the feeling of bloat and regret. Lol.
Another way to serve the 'zoodles' is to mash half an avocado and mix with salt and pepper. Mix with the noodles and you have an instant, creamy dinner to pair with meat.
For this week, I tossed the noodles in hummus and mixed with other vegetables for lunch.
Needless to say, zucchini is f*%$#ing amazing.
