Avocados are heavenly. They have such a wonderful taste. My favorite way to eat an avocado: mashed on toast with salt, pepper, and crushed red pepper. Sinful. I've been in an avocado funk lately though. I haven't eaten one in months..but I think it's because of the cold weather. Such a tropical fruit cannot be consumed in the dead of winter! So months later, here I am, rekindling my love for avocados. They are so delicate, one day they can be too hard to eat, the next, too ripe. After time, you learn how to tell if an avocado is ripe enough. Buy them rock hard. I wait until it is firm, but when squeezed, it has a tiny bit of squishiness. If it's too squishy..then you failed. Just kidding, but not. You can also pop the little circular top off to peak and see if it's green or brown. Obviously green flesh is good and ready to eat! Brown is no bueno.
*Fun fact: I don't like avocados and eggs together. Too rich for my liking, but it is an extremely popular combination.

I went out on the trail for an hour and a half today. I ran a mile and a half, walked a mile, and repeated until I did 2 loops. It was too nice to not be outside! I even got a little color on my cheeks. AH sunlight. Hopefully I won't be a vampire much longer.
Here's a little snapshot of the Back Cove trail. It is such a perfect and safe place to run, walk, ride your bike, walk your dogs, or exercise with kids. The sea breeze also helps when you're hot and sweaty. This will be my home all summer.
So yeah, 7 miles later and I was starving! I made a vanilla protein shake with one scoop (25 g protein) but needed something else. I separated some romaine leaves and made some lettuce wraps. Check them out!
I would have added tomatoes to make them 'BLT's' but I honestly can't stand tomatoes anymore (unless they are grape tomatoes).

Romaine lettuce is perfect for these wraps! It's easy to fold them up and enjoy. This is a perfect light lunch and you can add any veggies/meats into lettuce wraps.
I tried to make chocolate-avocado cookies. They came out delicious for my taste buds, but they will be a work in progress for now. Wait and see.
