I tend to go a little overboard with my love for chocolate sometimes. Lately I've been on a chocolate 'mug cake' craze. Literally a mini cake in a mug. It's probably turning into an addiction, but I guess I was trying to perfect the best gluten free mug cake. Believe it or not, using almond flour or coconut flour works better than using regular flour in mug cakes, regular flour tends to get elasticized and tastes like nothing. If you don't have the ingredients for this particular mug cake, let me know. I've made WAY too many & I could probably lead you in the right direction to make another, but this one came out best :)
GF Chocolate Mug Cake
3 tbsp almond flour
2 tbsp cocoa powder
1 tbsp coconut sugar, or honey/any other sweeter (you can add more depending on your sweetness preference)
1 tbsp almond milk
pinch of salt
1/2 tsp vanilla
Mix ingredients in a microwaveable-safe mug. Nuke it for about 1-1:15 minutes. The cake should be spongy, moist, and slightly dense. It is a filling cake that will certainly satisfy the dreaded chocolate sweet tooth.
I like to pair my mug cakes with peanut butter, almond butter, chocolate chips, or walnuts. Cake is yummy. Cake is even yummier when you can make it in under 5 minutes.
