Ben and Jerry's has it down. The first time I tried Peanut Butter Half Baked, I was hooked--easily their best flavor (sorry Chocolate Therapy). I'm a sucker for sweets, especially ice cream. Often times I find myself eating the whole pint...it's sad.
Here I am today, sitting in my 80 degree apartment, wanting something cold and chocolatey and peanut buttery. Specifically, PB half baked. But why go to the store to buy it when I can make it at home? It was a valiant attempt at re-creating this delicious treat with a handful of all-natural ingredients. For the ice cream base, I chose to use coconut cream. You can use full fat coconut milk or 4 large frozen bananas. If you are using bananas, omit a sweetener (unless you love sugar (: ). Coconut cream has a distinct flavor that I enjoy, if you've never used coconut cream then I suggest using bananas to get that sweet ice-cream flavor. Just a tip!
Fair warning that this is not a healthy treat. I believe that it's good to indulge with desserts! To make this ice cream better, it's vegan, paleo and gluten free. You're welcome.
I started by making the peanut butter cookie dough and brownie batter bits. Coconut sugar tastes exactly like brown sugar so it was a perfect flavor for the cookie and brownie bits.
PB Cookie Dough Bits:
2 tbsp all natural peanut butter
1 tbsp coconut flour
1 tbsp coconut sugar
*Mix together, form into balls, freeze until hard
Brownie Batter Bits:
1 heaping tbsp cocoa powder unsweetened
1/2 tbsp coconut flour
1 tbsp coconut oil
1 tbsp coconut sugar
*Mix together, freeze, break apart when frozen
While the dough bits were in the freezer, I made the coconut cream ice cream. I chilled a can of Trader Joe's Coconut Cream in the refrigerator for the afternoon to make sure that it was an extra thick consistency.
Peanut Butter Half Baked 'Ice Cream'
1 can of coconut cream (or 4 frozen bananas)
1 tsp vanilla
1/4 cup coconut sugar (omit if using bananas)
1 heaping tbsp of all natural peanut butter (for the PB half of the ice cream)
Put about half of the ice cream into a container, mix in the cookie and brownie bits. Keep the remaining ice cream mixture in the food processor, then add a heaping tbsp of cocoa powder.
Process or mix by hand.

Now, add the chocolate ice cream with the peanut butter ice cream, swirl in the toppings, and freeze!!!
Give this masterpiece a few minutes to defrost after you take it out of the freezer. Then enjoy!
