I made a creation today. A rather delicious creation. My only dilemma, I don't know what to call these. So I shall call these muffincakes. I'm so original.
Almond Flour Muffincakes
What you need:
-3 tbsp butter
-1/2 cup coconut sugar
-1 egg (disregard that there are 2 eggs in the picture....I had a dilemma with one of them so winged it with 1 egg)
-1/4 cup+ 2 tbsp almond milk
-1/2 tsp vanilla
-3/4 cup almond meal
-1/4 cup coconut flour
-1/2 tsp baking soda
*Preheat oven to 350.
First, start by mixing room temperature butter and coconut sugar together. Coconut sugar is textured so it may not incorporate as well as regular sugar. Don't panic!
Next, beat the egg in a separate bowl and then add to the sugar and butter mix. Incorporate well. Add milk and vanilla next. It will look like a goopey mess.
Add the almond meal, coconut flour and baking soda next. Now this will actually look like a batter!
Pour batter into well-greased muffin tins. Cook in the oven for 20 minutes.
I was surprised that these came out quite perfectly. I decided to make a bold move and make some buttercream frosting for these muffincakes.
Honey Cinnamon Buttercream Frosting
-5 tbsp room temperature butter
-2 tbsp coconut sugar
-2 tbsp honey
-1 tsp cinnamon
WAIT until the cakes cool down, don't want to make the butter frosting melt everywhere! I stuck mine in the fridge for 20 minutes and then frosted them. Since I'm no baking expert, I scooped the frosting into a plastic bag, cut a hole in it, and frosted them!
I was only able to eat one(shocker), but man it was delicious....Almond meal is too good. I ended up giving some to my mom, Coach Holly and a few others at Crossfit Peabody. Figures that I give away cupcakes before the wod. Only me :)
