I think these pancakes are easier to make than typing the word 'pancake.' I literally just misspelt it 3 times.
Anyways, here's the recipe!
-2 tbsp coconut flour
-4 tbsp milk of choice (i've used both almond and regular)
-1/2 tsp baking soda
-1/2 tsp vanilla
If you don't drown your pancakes in maple syrup or honey, you can also add it into the batter. I just like the sweet stuff right on top.
These pancakes are gluten free, but fluffy and moist. They are also super low carb so I don't feel guilty about eating four. Or having more sugar on the side. Whatever. Breakfast is the most important meal of the day so it must get the most thought and attention.
