Yes you heard me, green on green. If you don't like veggies or anything green, this will be your worst nightmare. But trust me, it's not that scary. Have some faith in this easy dish because you won't regret trying it. Remember my last post on zucchini noodles? If so, this recipe is going to add to it. If you aren't using zucchini noodles, you could use regular pasta, salad, or a dipping sauce. I bring to you, avocado dressing. Such a lame name, I know. I really can't think of anything else to call it because avocado is the main ingredient and who doesn't love avocado? Creamy, delicious avocado. I'm smiling and drooling as I think of how amazing avocados are. Anyways, here's the recipe for this avocado green dressing.
1/2 cup diced zucchini
1/2 lime juice
1 small clove garlic
1 tbsp olive oil
salt & pepper
*Add ingredients to a food processor and process until smooth.
Try not to lick it out of the food processor because it's so darn tasty.
Seeing anything green is sort of visually unappealing, but once it's smothered over some zucchini noodles, I think it looks better.
Seriously, look how creamy this looks. This makes a great dinner when paired with Chili Lime Chicken. Simply marinate chicken breasts overnight in the juice of 1 lime, chili powder, salt and pepper. Cook on the grill or on the stove top.
Summer in a dish. You won't have to overheat your house with this recipe either. I hope you try this! :)
