First thing's first, I love sweets. Specifically chocolate. I am one of those people who craves sweet food all of the time. Forget chips and salty snacks, give me chocolate! Chocolate and peanut butter make for an amazing combination. Reese's are my weakness. Ben and Jerry's Chocolate Peanut Butter Half-Baked is too. Chocolate and peanut butter are pretty much heaven when combined. One day, I stumbled upon Chocolate Covered Katie's chocolate peanut butter cups...inside out, and I decided to tweak it up a little bit. So glad I found this.
What you need:
Peanut butter cups:
-about 1/2 cup of peanut butter OR almond butter, I recommend all natural nut butter! Jif=gross
-1 tbsp coconut oil (melted)
-1/2 tsp vanilla
-pinch of salt if using unsalted PB
-honey or maple syrup to sweeten (I used about a tablespoon of honey). If you use too much it will clump on the bottom and it's no bueno!
*Mix well & spoon into an ice cube try or silicone trays if you have them. Freeze until peanut butter is solid. Takes about 30 minutes.
-1/4 cup of cocoa powder, unsweetened
-1-1/2 tbsp coconut oil (melted)
-1/2 tsp vanilla
-honey or maple syrup to sweeten
-I also added a tablespoon of espresso to the chocolate for extra flavor :)
*Spoon on top of frozen peanut butter, let tray sit overnight or for at least another hour.
Disregard my bitten nails..It's finals week....
But look at the PB cup. So simple to make! Plus, food tastes much better without the extra chemicals and sugars. One of these little cups satisfies my sweet tooth (and that is very hard to do). I've made these with almond butter before and they are just as delicious.
Finals week has never been sweeter.
